well, seeing that i was traveling last week (to DC) and didn't have much time to cook anything new -- i thought, I'd cook in DC. haha. i've been wanting to bake cookies FOREVER and Connie Kan made it happen. :D With a sneak peak into her kitchen cabinetry, i saw peanut butter and voila, the idea came to my head! haha. :D funny thing is - connie has also been wanting to make cookies too (but i probably forced the peanut butter factor)!
We used Barefoot Contessa's Peanut Butter Chocolate Chip Recipe... Was very yummy... but if i would make any improvements, it would be a) watch the 17 minute timer and adjust accordingly to your oven (we had a few burnt ones - but with connnie's smart idea - we sliced the burnt part off of the cookies while the were still soft - completely saved the cookie!), b) add more peanut butter, use less chocolate chips to make it taste more like peanut butter (or, perhaps it was the light-weight, or reduced fat JIF that made it different. you'll notice that the pictures look like regular chocolate chip cookies, but i swear there was peanut butter and it had the special "criss-cross" on the cookies!)... and also, if you recall a few weeks back -- there was a peanut product recall ... and just to save everyone time - JIF is not on the list of recall products...
